Ingredients:
1 large sweet potato, peeled and chopped
1 head of broccoli, chopped
1 onion, chopped
2 garlic cloves, minced
4 cups of vegetable broth
1/2 teaspoon of smoked paprika
1/4 teaspoon of cayenne pepper
1/4 teaspoon of ground ginger
Salt and pepper, to taste
1 tablespoon of olive oil
Preparation:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and cook until soft, about 5 minutes.
Add the chopped sweet potato and broccoli to the pot, along with the vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the vegetables are tender.
Using an immersion blender or a regular blender, puree the soup until it's smooth and creamy. If using a regular blender, be sure to let the soup cool before blending and only fill the blender halfway to avoid hot liquid splashing out.
Add the smoked paprika, cayenne pepper, ground ginger, salt, and pepper to the soup, and stir until well combined. Taste and adjust seasonings as needed.
